This tea comes to us through Takayuki Oyaizu, a third-generation Chashi based in Suruga-ku, Shizuoka. The Oyaizu family has been sourcing tea from regional farmers throughout Shizuoka to craft expressive, distinctive teas since 1949. While we primarily source matcha from Oyaizu-san, we were excited to collaborate with him to source a best-in-class stem tea (boucha) harvested from local tea fields throughout Shizuoka to use as a base for our roast club programming. We would describe the profile of this offering as ultra classic—soft, nutty, a little sweet, and with a lingering toastiness—the perfect selection for mizudashi or flash brewed cold brews in the summer heat.

We work closely with a network of small farms through our connections to Japan’s regional tea markets. Each prefecture maintains its own auction system, where teas from local producers are bid on.
